The Best Sausage Gravy and Biscuits

I have always loved breakfast. It is my favorite meal. One of my favorite things to have for breakfast is homemade sausage gravy and biscuits.

Something I am known for around our home (other than the finest of Dad jokes) is occasionally making sausage gravy and biscuits. I have to admit that I have gotten pretty good at it over the years. (No brag, just fact.)

Now, let it be known that I have tried to bring the love and joy of this southern delicacy to my wife over the years, but to no avail. Let the reader understand that being raised in Canada and then southern California has made the task hopeless. She doesn’t mind it (too much) for dinner, but certainly not for breakfast.

However, my kids love it. As I am typing this one of my daughters inquired into what I was writing about, and when I told her she said, “It really is true Dad. You do make the best sausage gravy and biscuits.” See, I told you.

So without further ado I thought I would share my very simple recipe with you.

Disclaimer: I have no intention in this post of giving any sort of “healthy” recipe or good health advice. The counsel and instruction I offer here is simply for the enjoyment of good eating and overall jolliness and mirth, which is, of course, a form of healthiness itself. It may not be the best for your arteries and heart, but as they say where I come from, “It’ll stick to your ribs.” So, if you are watching your carbs or fat intake (which I am actually having to do presently), I might suggest this light and fluffy little quiche recipe here. Or maybe this nice dainty fruit and yogurt parfait here. (But for those who actually want to EAT, read on brother.)

The recipe is so simple it’s actually rather embarrassing. But isn’t it true that most of the best things in life are the simple things, after all. (Hey, who would have thought that we would have gotten sentimental in a post about biscuits and gravy?)

This recipe makes plenty for our rather large crew, which has always included teen boys. Here is what I do.

Take one pound of breakfast sausage and brown it in a cast iron skillet. We typically use Jimmy Dean’s regular sausage. (If you can find Purnell’s “Old Folk’s” Country sausage… whew, you are in for a treat.) If you are using really greasy (usually cheaper) sausage be sure to drain some of that grease off.

Next, pour about 2 cups of milk (preferably whole milk) into the hot pan of cooked sausage.

Let the milk heat up for just a moment, then whisk one half cup of all-purpose flour into the milk and cooked sausage. Let this get hot and begin to thicken, stirring constantly.

After a couple of minutes, stir in another one and a half to two cups of milk, depending on how thick you like your gravy.

I usually add some salt and pepper (not too much) and sprinkle in some onion powder. Cook the gravy on medium low heat for a few minutes.

As far as biscuits go, I use Mary B’s Buttermilk Biscuits from the frozen section of the grocery store. We do have a good homemade “angel biscuit” recipe from my sister-in-law that is really good. But the frozen biscuits are great with the gravy, and much quicker.

Scramble you up some eggs, pour yourself a cup of hot coffee, (in the summer add a couple of slices of fresh tomato out of your garden 🍅) and you’ve got yourself a breakfast to tell the grandkids about.

It is important to remember that engaging in an activity such as this should never be an end in and of itself. So don’t forget to worship the Lord with each hearty bite, giving Him all glory for the good things in life, like biscuits and gravy.

And make sure you complete the meal with plenty of good fellowship and merriment around your family table. Some of the best moments to take advantage of in life could be around a meal of biscuits and gravy. (Yes, and maybe even a good quiche. Maybe.)

    1. Thank you! If you didn’t grow up with it I can understand it being a strange meal for breakfast. My second favorite breakfast is pancakes with good ole’ Canadian maple syrup 😋
